Winter Kale Salad

The best part of my husband being home is the fantastic meals we get to eat & last night was no exception. We enjoyed a very healthy salad for dinner with a glass of Pinot Noir. This salad will likely make a second appearance for Christmas dinner, it was fantastic! 🙂
Warm Winter Salad Recipe
- Gather & prepare ingredients
- Make the dressing by mixing all ingredients in a bowl
- Thinly slice kale & brussel sprouts
- Mix dressing with greens
- Sprinkle remaining ingredients on top
Dressing Ingredients:
2 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon Mustard
1/2 tsp minced garlic
1/2 shallot (minced)
salt & pepper to taste
Salad Ingredients:
4 cups kale (thinly chopped)
2 cups fresh brussels sprouts
(thinly chopped)
2 oz. manchego or
parmesan cheese
1/4 cup pomegrante
seeds
2 slices of bacon
(cooked & chopped)
